West Coast Pesto
Leo’s Take: It’s delicious, you can have it with anything. Pasta, eggs, chicken, fresh mozzarella, crackers, grilled shrimp… and so much more.
Ingredients:
2 cups fresh basil leaves (packed)
1.5 cups arugula from Star Route Farms
4 roasted garlic cloves
1/3 cup pecorino
1/3 cup toasted pine nuts
1 tsp red chili flakes
olive oil
1 tsp salt
zest of 1 lemon
Instructions:
Roast garlic.
Toast pine nuts in skillet till browned. Let cool
. Combine all ingredients in a food processor. Add olive oil while running until desired consistency
