West Coast Pesto

Leo’s Take: It’s delicious, you can have it with anything. Pasta, eggs, chicken, fresh mozzarella, crackers, grilled shrimp… and so much more.

Ingredients:

  • 2 cups fresh basil leaves (packed)

  • 1.5 cups arugula from Star Route Farms

  • 4 roasted garlic cloves

  • 1/3 cup pecorino

  • 1/3 cup toasted pine nuts

  • 1 tsp red chili flakes

  • olive oil

  • 1 tsp salt

  • zest of 1 lemon


Instructions:

  1. Roast garlic.

  2. Toast pine nuts in skillet till browned. Let cool

  3. . Combine all ingredients in a food processor. Add olive oil while running until desired consistency
