Roasted Beets

Leo’s Take: Super delicious tender and healthy side with any meat or poultry, also super good in a salad but chop it thin if you do.

Ingredients:

  1. - 3 Red or yellow beets

  2. - 1/2 Cinnamon stick

  3. - 1 Orange slice

  4. - 1 Blood orange slice (optional)

  5. - Salt

Instructions:

  1. Preheat your oven to 400. Take your beets and trim off the long part of the stem so that there is still a little there and the beet is not cut open.

  2. Take a piece of foil big enough to cover all the beets and wrap them in along with the citrus slices and cinnamon stick.

  3. Place on a tray and put it in the oven for roughly 40 minutes, then the take them out, unwrap and take a knife and let it slide into the beet without pressure if it does then it’s done! Note: If it’s still pretty tough wrap it back and put it back in the oven for another 5-10 minutes.

  4. Chop up in 1-inch pieces and place with your choice of toasted nuts, feta, and salt if you’d like. Goes great as a side for any roasted meats or brisket.
